“Seafood is perfect for a relaxed Friday night, because proteins like salmon, tilapia and shrimp don’t take long to cook,” said Chef Kevan Vetter of the McCormick Kitchens. “The trick is to keep it exciting during the long Lenten season – for instance, try mixing salmon with Cajun seasoning and bread crumbs to make a patty, and then top with lime mayo for a quick fish burger.”
